Mix Pakode & Chai

Ingredients

 

Gram Flour: 1 cup

Red Chili Powder: 1 tsp

Cumin Seeds: 1 tsp

Baking soda: ¼ tsp

Salt: 1tsp

Green Chilies: 5 (chopped)

Potatoes: 1 (medium size, chopped)

Onions: 1 (medium size, chopped)

Water: as required

 

Method

 

Add gram flour in a bowl, add all the spices and veges. Mix well and slowly add water to make a batter with moderate consistency. Heat oil in a wok, with the help of a spoon, drop the batter in oil. Fry the pakode until it turns golden brown. Serve with chutney and garam chai.

 

Serving: 2-3

 

Aalo Ke Parathay

Ingredients

 

For Dough

Flour: 2 cups

Oil: 4 tbs

Salt: 1 tsp

Milk: half cup

Water: as required for making dough

 

For Filling

 

Potatoes: 6 medium (boiled)

Red Chili powder: 1 tsp

Turmeric powder: ¼ tsp

Salt: 1 tsp

Green Chilies: 6 medium (chopped)

Green Coriander: half bunch (chopped)

Cumin Seeds: 1 tsp

Oil: 2 tbs

Curry leaves: 10

 

Method

 

Mash the potatoes, add all the spices and mix well. Add oil in a wok and cook the potato mixture for around ten minutes on a low flame. Keep aside and let it cool. Make a roti, put the potato filling on it, and place another roti over it. Seal the corners from all sides. Cook it from both sides, add ghee and cook until crispy.

 

Serving: Makes 6 parathas

 

Onion Rings

Ingredients

 

Onion cut into rings: 12

Flour: 1 cup

Black Pepper: 1 tsp

White pepper: 1 tsp

Ajinomoto: 1 tsp (optional)

Red Chilli flakes: 1 tsp

Baking powder: 1 tsp

Soya Sauce: 1 tbs

Egg white: 1

Bread Crumbs: as required

Ice cold water: as required

 

Method

 

Add flour in a bowl, add all the seasonings, and gradually add water to make a batter of medium consistency. Heat oil in a wok, dip a ring in the batter, roll it into bread crumbs and fry until golden brown. Serve with chili garlic sauce.

 

Serving: 2-3

Aalo Baday

Ingredients

 

Potatoes: 6 medium (boiled)

Red Chili powder: 1 tsp

Turmeric powder: ¼ tsp

Salt: 1 tsp

Cumin & Coriander seeds: 1tbs of each (roast and grind)

Black mustard seeds: half tsp

 

For Batter

 

Gram flour: 1 cup

Salt: half tsp

Water: as required

 

 

 

 

Method

 

Mash the potatoes well, add seasonings and make equal size balls. Make a batter of gram flour (medium to a thick consistency). Heat oil in a wok, take a ball, dip it into the batter and fry until golden brown. Enjoy with tamarind chutney.

 

Serving: Makes 5

 

Cheesy Bites

Ingredients

 

Chicken: 1 cup (boiled and shredded)

Salted Biscuits: 3 packets (Small Size)

Eggs: as required

Bread Crumbs: as required

 

 

 

 

 

For Sauce

 

Butter: 1 tbs

Flour: 1 tbs

Mustard Powder: 1 tsp

Black Pepper: 1 tsp

Salt: 1 tsp

Milk: 1 and a half cups

Cheddar Cheese: half cup (grated)

 

Method

 

Boil the chicken, let it cool and shred into small pieces. Heat a saucepan at a low flame. Add butter, flour, salt, black pepper and white pepper. Mix it well with a whisk, add milk and cheese and stir continuously until it gets thick. Remove it from the flame, let it cool and add chicken. Mix it well. Now take a biscuit, put 1 tsp of the filling and cover it with another one. Clean the sides dip it in beaten eggs and roll in crumbs. Make all the bites and shallow fry them all together at a medium flame until golden brown. Serve with tomato ketchup.

    And for the most part, they’re right!
    Fact is.. 99.99% of methods require you to have traffic.
    And that in itself is the problem..
